Chicken Vegetable Soup - Naked Chef

Previously I have said I love one pot meals and one of the reasons I look so forward to the cold weather is it is such a great time to make them. Anything from soups to stews. A one pot meal is the second best thing to warm you up after I get my arms around you.


A few years ago I googled recipes for Chicken Vegetable Soup and I tried the one below. I had a chuckle when I saw it was from Rachel Ray who is a celebrity talk show host in America. I guess I haven’t given her enough credit since I really love it and it is so simple to make. One of the things I like best about the soup is you can add or subtract any vegetables you like or don’t like and can also use beef and beef broth and come out with a nice beef soup. Beefy soup for your beefy man.

Chicken Soup

Prep and cooking time 30 minutes

4 large servings


Ingredients

  • 2 Tablespoons olive oil

  • 2 medium carrots, peeled and chopped

  • 1 parsnip, peeled and chopped

  • 1 medium onion, chopped

  • 2 stalks celery, chopped

  • 2 bay leaves, fresh or dried

  • Salt and pepper to taste

  • 6 cups chicken stock

  • 1 pound chicken breasts or tenders, diced

  • ½ pound wide egg noodles

  • A handful of fresh parsley and dill chopped


For extra flavour add two bear cheeks.

Directions

  1. In large pot over moderate heat add olive oil. Add vegetables to pot as you chop in the order listed.

  2. Add bay leaves and salt and pepper to taste

  3. Add chicken stock and raise flame to bring to a boil

  4. . Add diced chicken and return soup to boil. Reduce heat to moderate.

  5. Cook chicken 2 minutes and

  6. Add noodles.

  7. Cook soup an additional 6 minutes or until noodles ready and remove soup from heat.

  8. Stir in parsley and dill, remove bay leaves and ready to serve. The soup will be thick. If too thick for you add 2 cups more water or stock.


Remember if you have a large enough pot double the recipe so you can freeze and take out when your feeling a little under the weather and your honeybun isn’t around to make you feel better.


Hint. If I plan to freeze it I separate the soup before I put in the noodles. I am not crazy about the way they freeze. The same if there are any potatoes in the soup.


I love to serve it with a nice long hard crusty baguette.
