BB Soup

No it's not what your thinking. But winter is coming so you might want to find someone to keep you warm in bed. If that doesn't work try this recipe for black bean soup it's the next best thing. It will keep you warm from the inside out.


When the cold weather comes and Aaron’s at work all day if I have the time I love to cook. Winter is the perfect time for one dish meals, such as stews, soups and casseroles. The best thing about so many of these dishes is that they can be made in large quantities and will keep for ages in the freezer or a few days in the fridge.


One of my favorites is this Black Bean Soup, given to me by a friend years ago. If your vegetarian you can leave out the meat and it is still delicious. Also the condiments you can serve with it are endless.

Black Bean Soup

Will serve 6 for an entree at dinner or 20 servings if using as a starter. You can always half or quarter the recipe.


Ingredients

½ cup olive oil

½ pound salt pork or bacon diced

½ pound Westphalian or Black Forest ham diced

8 large onions chopped

8 cloves garlic minced or pressed

6 large stalls celery chopped

2 pounds dried black beans (about 5 cups)

½ teaspoon ground red pepper (cayenne)

4 teaspoon ground cumin

24 cups Chicken Stock or canned chicken broth

¼ cup wine vinegar

1cup dry sherry


Instructions


  1. Heat oil in 10-12 quart pan over medium heat. Add pork, ham, onions, garlic and celery.

  2. Cook, stirring occasionally, until vegetables are soft and lightly browned and all the liquid has evaporated, (about 45 minutes).

  3. Rinse beans until all debris removed, drain and add to pan with the red pepper, cumin and chicken stock or broth.

  4. Bring to a boil over high heat,

  5. Reduce heat, cover and simmer about 21/2-3 hours until beans mash easily.

  6. Skim fat from soup and discard.

  7. Whirl bean mixture a portion at a time in a food processor or blender until smooth.

  8. If you are making ahead of time return soup to pot before using, heat until steaming and blend in vinegar and sherry.



Condiments you can use

Polish sausage cut into pieces

Rice

Chopped red onion

Hard cooked eggs

Thin lemon slices

Pickle relish

Green chiles

Avocado or whatever else you like
